Pro tip:
“Flat grind” knives maintain their thickness through most of the blade, then taper off quickly at the edge. “Full-flat grind” knives have a long bevel that extends all the way from the spine to the edge. Flat ground blades have greater strength, while full-flat ground blades create less drag.
